Hi! Tonight we used up the last of our fresh picked peaches in a Sweet and Spicy Salsa. This salsa is perfect paired with meat, or just a big bag of chips - especially if the chips are blue :) Give this one a try....
2 large fresh peaches - peeled and diced
2 medium avocados - diced
1 cup diced Roma tomatoes
½ cup diced red onion
½ cup diced bell pepper – any color
The juice of one lime
¼ cup minced fresh cilantro
1 teaspoon rice vinegar
¼ teaspoon hot red pepper flakes
3 or more drops of Tabasco Sauce (depending on how much heat you want)
1 teaspoon agave nectar
Combine all ingredients in a large bowl. Cover and chill until ready to serve.
We sided this sweet & spicy salsa with grilled eggplant and pork loin.
