Oh brother, I really have to eat rabbit food tomorrow. We made some oh so yummy Patty Melts for dinner tonight with the delicious Rye Bread I made earlier. Well, at least we didn’t have them with a side of fries. They are super easy and very much a man pleaser. If you want to put a grin on hubby’s face, fire up the grill and make some melts tonight…..
Rye Bread slices see: Rye Bread with Caraway Seeds
Hamburger patties grilled to desired doneness
One thinly sliced onion
1 Tablespoon Extra Virgin Olive Oil
One package sliced mushrooms (2 cups)
1 heaping Tablespoon diced garlic
Salt and Pepper to taste
Thousand Island Dressing
1 Tablespoon softened butter
Pinch or two of garlic salt
First, slice the onions, and place in a large fry pan that has been coated with one Tablespoon of Extra Virgin Olive Oil.
Then, add the mushrooms and a big Tablespoon of diced garlic.
Cook over medium heat until nicely browned. Sprinkle with salt and pepper to taste and keep warm until you can assemble the melts.
Meanwhile, fire up your outdoor grill to grill the burgers. Cook them over med-high heat to desired doneness.
As the burgers are cooking, slice the Rye Bread into uniform slices.
Then spread butter over one side of each slice. Sprinkle a bit of garlic salt over the buttered sides.
When the burgers are ready to be flipped, place a slice of Swiss cheese over the cooked side and continue to cook on medium-high until the bottoms are cooked.
When the cheese has been placed on the burgers, place the bread slices butter side down on the grill to get a char. Remove when a little browned.
When the burgers are ready and the bread slices each have a char on one side, assemble the Patty Melts:
To the bottom slice of grilled Rye Bread place a cheese topped burger.
Then top with a tablespoon of Thousand Island Dressing.
Then top with grilled onions, mushrooms and the other slice of grilled Rye Bread.
We paired these delicious guys with a cucumber and tomato salad.
