Here is a delicious, nutritious and easy recipe for your green beans. Keep it cool. Make a salad. This recipe comes to us from my brother Blake. Give it a try and let me know how you like it….
1 pound fresh green beans rinsed and trimmed, then sliced diagonally.
4 – 5 whole sprigs of Lemon Thyme
1 cup thinly sliced celery on a diagonal
1 Tablespoon or so of rinsed and minced celery leaves
1 cup sliced cherry tomatoes
¼ cup toasted pecans – sliced in thirds longwise
1 cup diced pineapple – 1 inch dices
1 Tablespoon sesame seeds
4 Tablespoons Asian Dressing ( homemade, or commercial) * I use Ken’s SteakHouse Asian Sesame with Ginger & Soy Dressing *
Fill a large pot of water half full and add the sprigs of Lemon Thyme. Bring to a rolling boil. Then, stir the sprigs of thyme briskly. This will release the leaves and flavor the water. Then, remove the stems.
Next, add the green beans that have been rinsed, trimmed and slice on a diagonal. As soon as they are placed in the boiling water, turn the heat off. Allow the beans to “sauna” for 4 minutes. Then, pour into a colander to drain. If the beans are as softened, yet still as crisp as you want them, plunge them in cold water. If they are still too stiff allow them to cool off naturally in the colander.
Meanwhile, rinse and slice the other vegetables.
