Basque Potatoes

Living in the Northwest, we are blessed with a rich Basque culture.  We love the food, wine and festivals.     I particularly love the Basque Westward immigration history, so I was so happy to come across a great Basque Cookbook loaded with a lot of great recipes and also 67 pages of stories.   It is compiled by Darcy Williamson and the title is “Basque Cooking and Lore”.   Tonight I made Basque Potatoes, and it was a real hit.   We enjoyed these delicious potatoes with grilled pork chops and a green salad.   This is what you will need if you give it a try…..


Basque Potatoes  
     serves 4

½ cup finely chopped onion
½ cup chopped flat leafed parsley
½ cup shredded or chopped carrot
3 cloves garlic, minced
1 Tbsp. Spanish olive oil
1 ½ cups chicken broth
4 ½ cups cubed potatoes (approximately 1”)
Salt and pepper to taste



In skillet cook onion, parsley, carrot, and garlic in olive oil until vegetables are tender.
   

Add broth, potatoes, salt, and pepper.   


Cover and simmer for 10 minutes.   Uncover and simmer, stirring occasionally for 20 minutes or until potatoes are fork tender.


If you can't live without butter on you potatoes, just drop a little pat on the top of your individual serving.
